Memphis-style BBQ Cheeseburgers

These Memphis-style BBQ Cheeseburgers are all I want, every single day. The Memphis BBQ Sauce used in this recipe is the perfect condiment to the sweet and smokey spice rub on the cheeseburgers. It’s a welcome twist on the classic and can be reinterpreted in lots of dishes, from grilled meats to flatbreads. It gets its tang from tomatoes, vinegar, and molasses, plus a peppery kick from the spices.

Ingredients:

For the Memphis BBQ Sauce
  • 4 tbsp tomato paste
  • 1 tbsp apple cider vinegar
  • 2 tsp maple syrup
  • 1 tsp molasses (or brown sugar)
  • 2 garlic cloves
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
For the Memphis BBQ Spice Rub:
  • 3 tsp brown sugar
  • 1 tsp sweet smoked paprika
  • 1/2 tsp kosher salt
  • 1.5 tsp onion powder
  • 1.5 tsp garlic powder
  • 1.5 tsp ground ginger
  • 1/4 tsp dried thyme leaves
  • 1/2 tsp black pepper
For the burgers:
  • 1 cup microgreens
  • Thinly sliced red onion
  • Shredded cheddar cheese
  • 16 lb ground beef
  • 3 burger buns 

Instructions:

  1. For the sauce, process all of the ingredients in a food processor until smooth. Set aside.
  2. Combine the ingredients for the spice rub and set aside.
  3. Divide 16 oz ground beef into 3 patties, around 5 oz each and 1/2 inch thick. Season all over with salt & pepper to taste, then coat in the spice rub and set aside. Heat a cast iron with avocado oil on medium-high and cook patties, 2-3 minutes per side, until almost medium. Then sprinkle mild cheddar all over the patties and cover the pan until the cheese is melted, for 1-2 more minutes.
  4. Butter 3 brioche buns and toast on a grill pan. To assemble, layer the cheeseburger patty and use bbq sauce to stick on toppings - I used thinly sliced red onions, arugula, and microgreens. Spread the remainder of the BBQ sauce on the top buns and assemble the burgers.
