A FEW THINGS TO NOTE:
The dough should be at a cool room temperature before rolling out to cut into desired shapes. If it appears to be too soft or greasy, place it in the freezer for 15 minutes to flash chill and remove once it's malleable and a workable consistency.
Watch these closely in the oven at the 6-minute mark. Depending on how large you cut your cookies cut out to be, they can over-brown around the rims. The cookies will appear slightly underbaked in the center but will set completely as they cool on a wire rack.
